Yellow Squash Casserole

4 large yellow squash, cubed
1 small onion, chopped
½ cup water
1 clove garlic, chopped
½ cup sharp cheddar cheese
¼ cup non-fat cream cheese
6 soda crackers, crushed
1 large egg- substitute
Non-stick cooking spray

Preheat oven to 350°.
Using a 1-1/2 quart casserole dish; spray with non-stick cooking spray. In a separate saucepan, combine squash, onion, water, and garlic and bring to boil and then simmer for 12 minutes. Drain and mash. Stir in cream cheese, 6 tablespoons of the cheddar cheese and egg. Top with crushed crackers and remaining cheddar cheese. Bake for 30 minutes.
