2 tablespoons paprika
½ teaspoon ground pepper
½ teaspoon garlic powder
1/8 teaspoon cayenne pepper
6 russet potatoes, well scrubbed
6 tablespoons malt vinegar
Preheat oven to 450°. Coat 2 large baking sheets with nonstick cooking spray.
In a large bowl, mix together the paprika, pepper, garlic powder and cayenne.
Cut the potatoes lengthwise into wedges ½ inch thick. Add the potatoes to the spices, tossing to coat well. Arrange the potatoes in single layers on the prepared pans.
Bake for 15 minutes. Turn the potatoes and return to the oven reversing the position of the baking sheets to ensure even baking. Bake until golden brown and crisp, 10-15 minutes longer.
To serve, transfer to large platter and pass the malt vinegar to season to taste.
