3 cups plain nonfat yogurt
1/3 cup sugar
2 teaspoons grated orange zest
2 teaspoons vanilla extract
2 teaspoons unflavored gelatin
1/3 cup nonfat evaporated milk
1-1/2 cups fresh blackberries or strawberries
1 cantaloupe, peeled and seeded and cut into ½ inch cubes
In a large bowl, stir together the yogurt, sugar, orange zest and vanilla until smooth.
In a small heavy saucepan, sprinkle the gelatin over the evaporated milk. Let stand fro 5 minutes to allow the gelatin to soften. Place over low heat and stir constantly until the gelatin dissolves, about 3 minutes. The milk should be hot to the touch, but not come to a boil.
Stir the gelatin mixture into the yogurt mixture. Refrigerate, stirring occasionally, until the mixture is the consistency of softly set pudding, about 1-1/2 hours.
Spoon ¼ cup of the yogurt mixture into each of 6 stemmed glasses. Reserve 6 whole berries for garnish. Divide the cantaloupe and remaining berries evenly among the glasses. Top with an equal amount of the remaining yogurt mixture. Serve immediately or cover and refrigerate for up to 8 hours.
Top with reserved berries when serving.
